Laos is also known as Galanga or Thai ginger. It's related to the ginger family, but its taste is completely different. Laos is stronger and spicier. The root's structure is woodier and harder. Laos is frequently used in the Indonesian kitchen, for example in stocks, soups and fish and meat stews.
